ICCA UK & Ireland Chapter newsletter - May 2019

 As always we are enormously grateful for the support of our Chapter sponsor, Levy UK who kindly asked Celena Fernandez, Head of Environment for Compass Group UK & Ireland, to speak at our recent Annual Conference in Harrogate about sustainability and food waste.

Have you ever wondered what to do with the bits of food left over that you are always tempted to throw away? Designed in line with Levy's Food Waste objective and courtesy of the QEII Executive Head Chef, let us share with you the amazing Banoffee Brulee Cup. Easy to make at home and delicious!

Makes 12
Banana Brulee ingredients: 500ml double cream, 50g caster sugar, 150g egg yolk, 2 overripe bananas (from your fruit bowl)
Banana Toffee ingredient: 1 tin of Carnation caramel/toffee, 4 diced bananas (firm), broken biscuits (replacing tartlet cases)
Chantilly cream: 250ml double cream, 25g icing sugar, 1 tsp vanilla essence
Chopped dark chocolate for garnishing or left over Easter Egg

METHOD
Banana Brulee:
Rinse saucepan with cold water and discard the water
Combine double cream and caster sugar in saucepan and bring to the boil
Remove from the heat
Place egg yolk in a bowl and add boiled cream and sugar mix
Whisk together and pour into metal tray or similar
Peel and break up the bananas into the cream mixture in the tray
Bake in oven - 110 degrees, low oven for 30 minutes or until completely set
Cool slightly and blend in a mixer until smooth and free from lumps
Pour into another tray, press cling film down on top and chill overnight in the fridge.

Banana Toffee:
Take 150g of toffee and soften in a bowl or a pan of boiling water until runny
Fold together the 4 diced bananas and toffee ensuring bananas are coated evening
Make Chantilly cream by mixing all the ingredients together until medium firm peaks
Place crushed biscuits in bottom of small glasses
Pipe a layer of banana brulee over the top of biscuits - approx 1 cm
Spoon on top a layer of toffee bananas
Cover with another layer of brulee mix
Finish with more toffee banana
Pipe roses of Chantilly cream on the top
Garnish with chopped or broken chocolate
Enjoy!  

 

Harrogate Conference, March 2019

Thank you to everyone who joined us in Harrogate for our 2019 Conference. The sessions on Harrogate International Festivals and Celena Fernandez’s session on sustainability were rated highly but the #GiveAHand prosthetic session delivered by our keynote, David Meade, was without doubt favourite, scoring a huge 4.9 out of 5 stars in our feedback survey.

Harrogate were incredible hosts and the Harrogate Conference Centre itself was a great venue for the conference. In the evening the Pump Rooms hosted a gin reception courtesy of Slingsby’s Gin and the opulence of the Royal Hall was then the perfect setting for the conference dinner with some truly memorable entertainment from the world-famous Globe Girls (see photo: Thomas Mauch from the QEII conference centre clearly enjoying himself!).

It was a pleasure to see our community come together for such a positive two-day event. There are other more major events that the industry can attend globally but the ICCA UK & Ireland Annual Conference is one that we put together with limited resources, keeping the registration costs to a level that is accessible to all and ensuring that ICCA members can send staff who would not usually be able to attend.

Our competition winner is.....

The Harrogate conference also included the final of this year’s competition to win a place at the 2019 ICCA World Congress in Houston. The four shortlisted finalists, who have all been in the industry less than three years, submitted a video presentation as to why they should attend. 

The winner was Jack Owens from Fáilte Ireland who said: “Not only did I have great fun making the video, but I also got to network with my industry colleagues at the UK & Ireland Conference. I was delighted to win such a prestigious competition by speaking about a topic which has help me grow as a young professional.”

Success follows success - hopefully!

Not only did we have record breaking attendance in Harrogate for our Annual Conference but nearly half of those joining us were first timers (see photo). 

Next up is the ICCA World Congress in Houston and it's never too early to be thinking about the famous CAT Night games. Last year the ICCA UK & Ireland team came 2nd - our best result ever! We are looking to improve on that for 2019 so please let us know if you would like to participate. Samantha Shamkh has kindly agreed to co-ordinate the team again as our very own Performance Director!
